Cooking Day and a Big Birthday

Alejandro had a birthday this week, and guess how old he was.

Gaby, tell us about the cake. There were cupcakes in another picture, but this one looks delicious too.

So cooking, hmmm. I'm not a good cook and spend as little time in the kitchen as possible. I try - sometimes - and can make some things okay, but I think the kitchen senses my apathy and works against me. I end up with missing ingredients, extra ingredients, and big messes.

But sometimes I do some cooking to take my father-in-law in Andalusia. He lives alone and is probably one of the few people who seem happy to see my dishes. He may just be being polite, although I've seen him put away some banana pudding and Mexican casserole that I've made.

I'm going to spend the day with him tomorrow and so made a few things for his freezer. I'm very proud of having some keepers and so took lots of pictures.

Baked macaroni and cheese:

Parmesan oven-fried chicken:

Charlie's Cornbread, a little dry this time but still okay:

Lime congealed salad, a bright concoction that our family seems to like and that we serve to make people from other countries and South Dakota lose their appetites (more for us):

And best of all, these fresh peach/blueberry cobblers. They're not pretty but reaallly good. Best eaten warm with vanilla ice cream but just fine without. (One thing a certain South Dakotan did like, I think). I found the recipe on a blog I read, and I did my best to go back and find where I got it but couldn't do it. The top crust is strangely strips of loaf bread (wheat in this case) and some leftover frozen piecrust pieces, but it's amazingly good. Did I already say that?

That's it, but I think it will work okay.

Animals on a sweltering August afternoon. Sheepy just had a bath but Darby did not.

You can tell when the grass gets chin deep to Stella it's time for the beloved yard men to show up with their machines of destruction and their evil looks.

  1. Happy Birthday Alejandro! Before I know it, my little boy will be that old!

Becky, everything looks delish, but that pie is stunning! Great job! I feel the same way you do about the kitchen--I don't like it and it doesn't like me. Luckily, my husband actually likes to cook and is very good at it, so we don't starve here.

Congealed salad is a Southern thing, I think!! My grandmother makes her version pink and it is soooo good. It's easy to make too; I don't know why I don't do it.

Have a great Friday and a wonderful weekend!

PS-How are the newlyweds adjusting to their new life?

  2. I thought the reason Ryan wouldn't try the salad was the Southern thing, but he said he was used to congealed salad, just not that - uh - color. I guess I could make it pink, but we kind of like the lime taste.

I'm not hearing much out of the Issaquah folks. Unpacking and getting set up is taking all their time. They're gradually getting phones, cable, etc., done. Emily starts her job Monday, Karen starts this week, and Ryan keeps on with his job search.

Enjoy your weekend too and let me hear what's going on this fall.
